Mmmmmm…Sounds delicious, no? No. But that is the English translation of Carne Sudada, one of my Colombian husband’s favorite meals. It is a Colombian version of beef stew. Well enough of that.
This stew can be made in a pressure cooker or regular stove top. I like the flavor you get from the pressure cooker and the fact that it cooks faster. I got my inspiration for this recipe from Comida de Colombia blogspot.
Carne Sudada
Ingredients
- 1 tablespoon olive oil
- 2 pounds of beef, cut into cubes (tougher cuts of meat will need to cook longer)
- 4 ½ cups water
- 2 large onions, grated
- 2 large ripe tomatoes, grated (you can put them in a blender or food processor along with the onions – if you chop them first)
- 4 cloves garlic, peeled and finely chopped
- 1 tablespoon mustard
- 2 tablespoons black sauce (this is a product similar to Gravy Master, but a soy/Worcestershire sauce mix can be used)
- ½ teaspoon sugar or other sweetener (I use agave nectar)
- 2 bay leaves
- ½ tablespoon dried thyme
- 1 tablespoon dried oregano
- 1 tablespoon ground cumin
- ½ tablespoon fresh ground black pepper
- 1 packet Sazon, optional
- salt to taste
- 1 pound yuca, peeled and cubed
- 1 pound potatoes, peeled and cubed
- chopped cilantro, for garnish if desired
Instructions
Heat a pressure cooker over medium high heat and add the olive oil. Brown the meat with the garlic on all sides. You will probably need to do this in batches or the meat may start to “sweat” early. Add the water and bring to a boil.
Add the remaining ingredients, except the yuca and potatoes. Cover the pressure cooker and bring to pressure. Turn heat to medium low and cook until the meat is tender, about 15 minutes (tougher cuts take longer and also the size of your cubes have an effect).
Remove the cover and add the yuca and potatoes. Cover and bring to pressure. Cook 10 minutes. Taste for seasoning and serve over rice and garnish with cilantro, if desired.
