Colombian Churrasco (Grilled Sirloin Steak)
In some countries Churrasco is made from filet mignon, skirt steak, or beef tenderloin and pounded thin. In Colombia is made from lean sirloin (my grocery calls it London Broil cut) and it is about 1 to 1 1/2 inches thick. It’s marinated in a chimichurri sauce then grilled or broiled.
NY Strip Steak
New York Strip Steak is one of my favorite pieces of meat. It is tender and has a wonderful flavor. The seasoning for this, while not a copycat, is reminiscent of a Montreal Steak Seasoning. This would be good to make in a larger batch and keep on hand for other meats as well.
